Lyons Maid Vanilla Strawberry Parfait

Serves 4

Ingredients:

• 8 scoops Lyons Maid Vanilla Ice Cream
• 1 cup strawberries (fresh or frozen, sliced)
• 2 tbsp sugar or honey
• 1 cup crushed biscuits (digestive, graham crackers, or shortbread)
• Whipped cream (optional, for topping)
• A few mint leaves (for garnish)

Instructions:

Prepare strawberries: In a bowl, mix strawberries with sugar/honey and let sit for 10 minutes to release juices.

Layer the parfait:

• Add a spoonful of crushed biscuits at the bottom of each glass.
• Add 2 scoops of Lyons Maid Vanilla Ice Cream.
• Spoon some strawberries with their syrup on top.

Repeat layers if using tall glasses.

Finish with whipped cream, a sprinkle of crushed biscuits, and a mint leaf.
