Fresh Garden Salad with Presto Vinegar Dressing
Serves 2–3
Ingredients:
- 2 cups lettuce leaves (washed and torn)
- 1 cucumber (sliced into half-moons)
- 1 large tomato (diced or sliced)
- 1 medium red onion (thinly sliced)
- 1 small carrot (grated or julienned)
- ½ cup sweet corn (optional)
- A handful of fresh coriander or parsley (chopped)
Dressing (with Presto Vinegar):
- 3 tbsp olive oil (or vegetable oil)
- 1 ½ tbsp Presto Vinegar
- 1 tsp honey (or sugar)
- ½ tsp mustard (optional)
- Pinch of salt and black pepper
Instructions:
Prepare the vegetables: Wash, chop, and arrange them in a salad bowl.
Make the dressing: In a small bowl or jar, whisk together olive oil, Presto Vinegar, honey, mustard (if using), salt, and black pepper until smooth.
Toss the salad: Pour the dressing over the veggies and toss gently to coat everything evenly.
Garnish with chopped coriander or parsley.
Serve fresh as a side dish or add grilled chicken/boiled eggs for a complete meal.
